I believe Shy means the appearance of the teacups (such as in a spiny puffer) has been updated. So like spots vs plates or something of the sort. Crossed with an old-style standard (I believe she actually is referring to Lyra?) would the old or new traits carry over? Or is that all up to dice rolls as usual?

I'm pretty sure they would be the new style.
